The Chill Café BierGarten Story
In October 2017 Hana and Carsten decided to open a little Café. It happened that exactly the Café Carsten had an eye on years ago was vacant. Shop 2 on 7 Dickson Street in Wooloowin. Carsten, a qualified Chef from Germany, quit his secure job at The Prince Charles Hospital, where he worked for more then half a decade as a Phlebotomist (Blood Collector). Having a Café was always what he and Hana wanted.
Hana and Carsten started renovating and setting up the shop all by themselves. From sanding the floor to building the counter, everything made from scratch. Soon members of the community noticed that there was something going on and they came by and were wondering what’s happening. Carsten, excited and enthusiastic, was more then happy to talk about his plans opening a Café and offering breakfast and lunch. The response was from ‘Well, good luck we looking forward to it’, to ‘Well, good luck, we have seen many come and go’ or ‘Very brave, now just before Christmas and School holiday’… Which wasn’t exactly what Carsten wanted to hear.
The opening day was the 4th of November 2017. The outdoor setting was very basic. Second hand plastic chairs, 4 tables set up on cracked asphalt. Not very attractive, but that was all Carsten and Hana could do at that stage. Little by little they developed the place. The community became part of the development and the progress. ‘The support we received and still receive is just unbelievable’ Carsten said. ‘We could have set up the shop perfectly fine and uniform from the beginning, but that would have been it’. Every week they added something new or changed things around. Cleaned up the area under the trees, where commuters were parking their cars, and created the outdoor area under the trees with Granit gravel and turf. It looked very nice, however heavy rainfall and an overrunning storm water manhole on the property, washed most of the good looking gravel away. Asphalt on the side of the building replaced the gravel and the storm water drain got fixed.
The Chill Café became more and more popular. Full table service got established and the Friday Dinner Nights started. Beautifully illuminated trees and a firepit creating a very unique and cozy atmosphere.
In year 3 Covid hit and times changed. During lock downs The Chill Café remained closed to protect staff and customers. Carsten and Hana decided to renovate and re-brand The Chill Café, to re-open as ‘The Chill Café BierGarten’.
A proper Kitchen and indoor sitting with a German feel should be created. The concept focused on German food and Biergarten atmosphere. Then, if Covid wasn’t already enough, Hana got diagnosed with Cancer… what a shock! The support from the community was overwhelming. Customers became friends. They helped with the renovation and organized as much as they could to keep Carsten’s back free. ‘Without the support of those friends, The Chill Café BierGarten wouldn’t have happened’ Carsten said. ‘We are so grateful and immensely proud to be part of such strong community after a long journey and against all odds’.
The renovation finished, The Chill Café BierGarten established and awarded BUT most importantly Hana cured after all! Carsten and Hana are full of energy! Ready for the next chapter in 2022….
